A happy accident. Nourishing pizza recipe.
Carbs + fiber + protein with a twist.
Due to the current pandemic we ended up delivering quite a few grocery by Costco. In the madness of not getting delivery dates I just added as much as I could in a hurry when I got one, and forgot to check the weight of a couple items. Our delivery turned in and to my surprise the grated cheese we ordered was huge, 2.5 lbs x 2 bags huge!
At first I tried to see if I could share it with a friend or donate but had negative answers. Thankfully, cheese freezes very well, no texture and taste loss. I started looking up recipes to use this all up, and I came across a pizza recipe which is made on a griddle with roti as a base. I intended to make this for Bubu, but we ended up loving it too. It's a great recipe for the days when you are lazy or don't have the energy to cook after a busy day.
I do not have photos for each step, as this was a after thought, but the steps are easy :)
Let's make it
You will need
Roti
Cut veggies - Example: corn, carrots, peas, beans, mushrooms, peppers, cabbage, spring onions
Paneer/chicken (optional) - 1/4 cup
Tomatoes - 1 qty
Garlic cloves - 2 qty
Basil - 1 tbsp
Oregano - 1 tbsp
Salt - to taste
Garlic powder - to sprinkle on topping
Chilly flakes - to sprinkle on topping
Grated cheese (obviously :)
Process
To make a quick pizza sauce blend tomato, garlic, basil, oregano. You can use the store brought pizza sauce or tomato ketchup works great too. We have tried the Trader Joe's Organic Tomato Ketchup, tastes good.
Cook roti on one side.
Flip and set the burner to lowest heat setting.
Spread the pizza sauce. Add veggie toppings, sprinkle salt, garlic powder, end with cheese.
Cover with lid. This helps retain heat for the veggies to cook and the cheese to melt.
Check if the roti is cooked underneath. If yes it's ready to serve.
Sprinkle oregano. If you are making for an adult you can top it with chilly flakes too.
Cut the roti pizza like pizza slices.
Bubu does not like pizza as such but he loves this roti pizza. I am glad to offer this anytime he asks as its easy to make with whatever veggies you have on hand. Plus it's roti sabji with a twist or carbs + fiber + protein, so why not!
