A great replacement if your kid loves chocolate.
Nutritious chocolate!
I never planned to share food recipes on this blog. We aren't having any exciting outdoor adventures due to current pandemic. I thought, the need to have a healthy snack for your lo never ends, so why not.
This is a combination of many recipes I read researching "energy balls". Unlike any other recipe, this one has cocoa so its a great replacement for store brought chocolates. Infact this is healthy as its made with protein + nutrient rich nuts, antioxidant rich cocoa powder and sweetener is dates not sugar.
I do not have photos for each step as this was a after thought, but the steps are easy :)
Let's make it
You will need
Medjool dates (pitted) - 1 cup (around 15)
Walnuts - 1 cup
Cashews - 1/2 cup
Almonds - 1/2 cup
Raisins - 1/2 cup
Pure unsweetened cocoa powder - 1/4 cup
Wheat flour (roasted in ghee) - 2 cups (optional)
Salt - 1/8 tsp
Process
Walnuts, cashew and almonds can be either soaked overnight in water or roasted. I have tried both versions. End result's of both are delicious. The only difference is if you soak in water then you will have to store them in the refrigerator, if you roast then they are shelf stable.
Add all ingredients to a food processor and blend. I used all organic ingredients but it should not matter.
Occasionally stop to scrape down the sides. Stop when it's a sticky consistency.
Remove the blade.
Apply ghee/oil to palms and using your hands, form the batter into 1-inch round balls.
If you end up making too many, store it in the freezer for up to three months. I have tried
storing in freezer it freezes very well, no texture or taste loss. If your Bubu loves to help they can help making the balls. My Bubu does not like sticky things, but he helped with the food processor bit. Bubu loves it, he can eat 2 - 4 in a sitting. Try it, its yummy!
